At first, this classy wine is deceptive because it doesn’t reveal everything at once. It takes time to open, starting with a light spray of citrus, all pink grapefruit and Meyer lemon, with an even lighter flutter of smoky sulphides. In time, flavours build with spicy, cedary oak, all integrated, adding shape, too, with nougatine-like lees and mouth-watering acidity. The finish is long, and all up, this is a beauty.

Evans & Tate has been part of Margaret River's winemaking story since the 1970s, when John Evans and John Tate recognised the extraordinary potential of this beautiful stretch of Western Australia's coastline. The Redbrook range represents the more distinguished side of the winery, drawing on carefully selected vineyards and a thoughtful approach to winemaking. While Margaret River is famous for Cabernet Sauvignon, its Chardonnays have become equally compelling, combining generous fruit with the freshness and elegance that come from the region's maritime climate.
The Redbrook Estate Chardonnay reflects Margaret River's remarkable suitability for the variety. Warm, sunny days encourage flavour development, while cooling Indian Ocean breezes help retain natural acidity and aromatic freshness. Careful barrel fermentation and maturation contribute texture and complexity, with oak complementing rather than dominating the fruit. The result is a beautifully balanced Chardonnay that sits comfortably between the richer traditional Australian style and the more restrained, mineral driven expressions that have become increasingly popular.
Pale straw yellow with golden highlights. White peach, ripe nectarine and lemon curd mingle with grapefruit, toasted cashew and a little fresh brioche. Subtle notes of vanilla bean and struck flint add further interest. The palate is generous and finely textured, with juicy stone fruit, citrus and a creamy, gently rounded middle. Fresh acidity keeps everything lively, while toasted almond, savoury oak and a delicate mineral character contribute depth. The finish is long and beautifully composed, with lingering lemon peel, white peach and a touch of roasted hazelnut.
Grilled marron with lemon butter, roast snapper with fennel or scallops with a little browned butter would be wonderful companions. It would also be excellent with mushroom risotto, roast cauliflower with Parmesan or a creamy chicken and leek pie. Serve cool rather than icy cold, allowing its texture and subtle oak complexity to develop as the wine warms slightly.
