Golden rim edge with tones of hay and green straw. Alert. Mineral water, wet quartz cut from a river bed; stone fruits hinting at ripeness yet always restrained. Almond, fennel, aniseed, spice and freshly cut cucumber. An overarching acid structure around which all of the other flavours, textures and tensions sit. This makes for a richer middle palate before a more savoury, flinty, nutty and salty back palate kicks in. A long and dry after-taste wherein the mid and back palate flavours linger.
