Pale straw in the glass with notes of green apple, Meyer lemon and stone fruits cut with hints of pressed flowers, stone, spiced apple tart and a whiff of flint. The wine coils on the palate, gaining energy, and releases with impressive velocity, all minerals and slate as it zips across the tongue. Finishes pure of fruit with a gentle tug of phenolic texture.

The Holm Oak Riesling from Tasmania’s Tamar Valley is a crisp, zesty and beautifully expressive cool-climate white that reflects both the character of the vineyard and the talent of winemaker Rebecca Duffy. Holm Oak, based just outside Launceston, has built a reputation for producing wines with brightness and purity, and their Riesling is a standout. The Tamar Valley’s cool maritime climate, with long daylight hours and moderating breezes, gives Riesling extended hang-time, allowing flavours to develop while retaining piercing acidity.

In the glass, the wine is pale straw with a green tint. The bouquet is delicate yet lifted, full of lime zest, lemon blossom, apple and white florals, layered with hints of wet stone and mineral spice. The palate is dry and taut, showing juicy citrus and green apple flavours carried by crisp acidity. There is a fine chalky texture that adds depth, and the finish is long, refreshing and mouth-watering, leaving a lingering impression of citrus and minerality.

Food pairings highlight its freshness and vibrancy. Think natural oysters with lime, grilled Tasmanian scallops, Thai fish cakes with lemongrass, or fresh sushi and sashimi. It is also an excellent partner for goat’s cheese or lightly spiced vegetarian dishes. While perfect for drinking young, it will cellar for 8 to 10 years, developing honeyed, toasty notes and richer texture while maintaining its citrus drive.
