Soil type :

The delimited area of our Petit Chablis wines lies on the plateau of the Commune of Villy, on soils of Barremian oyster marl from the secondary era, dating from 130 to 65 million years ago.

The soil is cultivated according to a policy of integrated farming, in which we avoid the use of polluting weedkillers in favour of mechanical cultivation of the soil, such as ploughing.

Vinification :

Pneumatic pressing and cold static settling.
Spontaneous alcoholic fermentation and ageing in temperature-controlled stainless steel vats.

Tasting :

Our Petit Chablis is a wine that expresses itself best when young. Very fruity and fruity, our Petit Chablis is excellent as an aperitif. Tender and fragrant, it goes wonderfully with fish and seafood starters, as well as charcuterie.

Involved in the wine industry since 1792, the Collet family has been firmly rooted in Chablis’ long-standing history.  When Jean Collet established the Domaine in 1952, wines were mainly sold in bulk to local négociants. two years later he bottled wines under his own name.

In 1979, his son Gilles joined the family business and the operation was renamed into Domaine Jean Collet et Fils. Today, Romain Collet represents the 4th generation of winemakers. He took over the family business in 2009, at the young age of 21, after having honed his skills across France and New Zealand.

The Domaine covers around 40 ha from Petit Chablis, village and premier cru and grand cru holdings – Romain has converted the entire cru production over to organic farming and intends to increase this ratio to 100% in the coming years.

Produced from vineyards planted on the hillsides, from the villages of Chablis and Préhy. Wonderfully balanced and very attractive, with a remarkable freshness and minerality – one could say a very ‘classic’ style. Expressive and open with hints of ripe and exotic fruits, introducing sappy, plump and nicely mineral flavours. Well balanced wine, ideal as an aperitif.
