Jean Defaix Chablis is produced with grapes grown under organic farming practices, ensuring that no synthetic chemicals are used in the vineyard. The grapes are hand-harvested to ensure optimal ripeness and quality. Fermentation takes place in stainless steel tanks, which preserves the freshness and minerality of the wine. The wine is aged on fine lees for added texture and complexity, without the influence of oak, allowing the pure expression of the Chablis terroir to shine through
The 2023 Jean Defaix Organic Chablis is a superb example of classic Chablis with a modern, organic twist. With its crisp acidity, vibrant fruit flavors, and distinct minerality, this wine is perfect for those who appreciate fresh, terroir-driven wines. Whether paired with seafood, light salads, or enjoyed on its own, this Chablis offers a delightful and refreshing experience that highlights the best of Burgundy’s winemaking traditions.
A stylish Chablis offering lemon, lime and candied apple flavours on the nose. Bright and minerally palate with impeccable balance, and wet pebble.
Daniel Dampt is one of Chablis’ most celebrated producers, and he produces wines both under his own name and that of Jean Defaix, his father-in-law. The domaine covers 30 hectares of vines (16 in AOC Chablis and 14 in 1er Cru vineyards) split across five sites.
Working with his two sons, Vincent and Sebastien, who have worked in New Zealand and Australia, the family produce clean, ultra-pure whites with bright steely acidity and not so much as a hint of oak. They craft wines that are true to the history of the region and reflect the rich heritage of the Defaix name.
