Joseph Drouhin Vaudon Chablis is a beautiful expression of classic Chablis, shaped by the ancient limestone soils that make this corner of Burgundy so distinctive. The vineyards lie on Kimmeridgian marl packed with fossilised oyster shells, giving the wine its trademark saline, chalky character and crisp, mineral driven style. This is Chardonnay stripped back to its purest form, where place speaks louder than oak.
The Drouhin family has been making wine in Burgundy since 1880, and their Vaudon estate is one of the most important holdings in Chablis. It includes parcels across some of the best slopes in the appellation, all farmed with a strong focus on sustainability and vineyard health. The aim is always clarity and balance rather than heaviness.
In the glass, the wine shows lemon zest, green apple and white flowers, with a clear oyster shell and wet stone minerality. The palate is tight, fresh and precise, driven by bright acidity and finishing long, clean and saline. It is refreshing, elegant and incredibly food friendly.
This is a superb wine for the table. Oysters, prawns, grilled fish, sushi, goat’s cheese or simple salads all sing alongside its mineral drive and citrusy lift.
Joseph Drouhin Vaudon Chablis is designed to be enjoyed young for its vibrancy, but it will also age gracefully for five to eight years, gaining subtle honeyed and nutty notes while retaining its fresh, chalky core. It is a classic, reliable Chablis that delivers true Burgundian character.
