Harvested in a single pick from a single block in Saint Matthias vineyard, there is a real sense of Grigio texture in this wine. The majority of the fruit is wild fermented, 70% of the fruit is kept on skins overnight then split into batches for maturation. 30% of the fruit is fermented and matured in stainless steel, the remainder is evenly split between barrel and tank fermentations.
White florals and Turkish spice present nicely on the nose and carry gently to the palate, while the wild fermentation brings a luscious, soft mouthfeel and great textural length.
