All up, 10 hours' skin contact then pressed to stainless steel and left on lees for around 10 months. It has texture and body although it’s by no means voluminous, as it’s tightly wound by the acidity, which is exhilaratingly fresh. Aromas and flavours of honeydew, citrus, blanched stinging nettles, coriander and the merest hint of white pepper and fennel. Pleasingly savoury, too. It oscillates well between complex/detailed and highly gluggable/refreshing.

Tumbarumba, perched high in the foothills of the Snowy Mountains, offers the ideal conditions for Grüner Veltliner—elevation, cool nights, and long, gentle ripening that allows flavour to build slowly while preserving acidity. The fruit for this wine comes from select vineyards that thrive on ancient volcanic soils, bringing texture and a mineral-driven backbone to the glass.

Nick Spencer is known for his clean, contemporary winemaking style—expressive but never overworked. The Grüner is fermented in stainless steel to lock in aromatic brightness and left on lees for a short time to add subtle complexity and mouthfeel without losing its drive and precision.

On the nose, expect lifted notes of white pepper, green pear, lemon peel, and a whisper of fennel. The palate is dry and lively with crunchy acidity, citrus and pear fruit, a touch of spice, and a gently textural finish that leaves you reaching for another sip.
