Domaine Papagiannakos, established in 1919 in the heart of Mesogaia, Attica, is renowned for its dedication to the indigenous Savatiano grape. Under the guidance of third-generation winemaker Vassilis Papagiannakos, the winery has embraced modern techniques while honoring traditional practices, resulting in wines that authentically express the region's terroir.
The Old Vines Savatiano is crafted from 70-year-old, non-irrigated vines rooted in limestone soils at an altitude of 100 meters. These deep-rooted vines yield approximately 4,000 kg per hectare, producing grapes of exceptional concentration and character. Harvested by hand in mid-September, the grapes undergo fermentation in stainless steel vats at controlled temperatures between 16-18°C, preserving the varietal's delicate aromas and flavors.
In the glass, this wine presents a bright yellow hue. The nose offers a delicate bouquet of citrus fruits, including lemon and lime, complemented by subtle floral notes. On the palate, it is crisp and fresh, with a pleasant acidity that balances the fruit flavors. The finish is long and satisfying, leaving a lingering impression of citrus and a hint of minerality. This Savatiano pairs excellently with Mediterranean dishes, seafood, fish, and white meats. It also has aging potential, allowing for the development of additional complexity over time.
