The Pink Billy is made by the saignée method — a partial bleed of juice from the red fruit at the sorting table, selecting berries by weight and colour before fermentation even begins. It is a more considered method than direct pressing, and the result carries more texture and depth than most rosés at this price. The blend of Merlot, Shiraz and Cabernet Franc is well chosen — the Merlot provides body and ripe berry, the Shiraz adds spice and colour, and the Cabernet Franc brings a lifted, almost floral edge that gives the wine its personality. Fifteen percent sees older oak for fermentation, the rest in tank with wild yeast, then extended lees ageing for texture.
Pale salmon pink in the glass. The nose is bright and fresh — strawberry, ripe red cherry and a gentle floral lift. The palate is where it earns its place in the Number Series — dry, creamy and softly textured, with real fruit weight and a savoury finish that lingers. Equally at home on a warm afternoon as it is at the dinner table.
Vietnamese, Thai, Japanese, fresh seafood, grilled chicken or a mezze spread. Good enough to open on its own too.
