Bougros is one of Chablis’ seven Grand Crus, a steep, south facing slope of Kimmeridgian limestone and fossil rich clay that produces some of the region’s most powerful yet precise wines. Maison des Hâtes is the project of Pierrick Laroche, a member of the Laroche family who established his own domaine to focus on meticulous vineyard work and terroir clarity. Farming is thoughtful and increasingly organic in approach, with low yields and careful canopy management to preserve balance in this sun drenched Grand Cru site.
Winemaking is tuned toward transparency rather than weight. Whole bunch pressing protects finesse, fermentation is slow and controlled, and élevage in a combination of tank and carefully selected oak builds texture without masking the mineral core. The philosophy is about letting Bougros speak clearly, capturing both its generosity and its chalky tension.
Pale gold in colour, the aromas open with lemon zest, white peach and green apple layered with oyster shell, flint and subtle spice. The palate is full but tightly structured, with citrus and stone fruit carried by bright acidity and a creamy yet saline texture. Flavours stretch through a long, mineral finish that feels both broad and precise.
It pairs beautifully with lobster, scallops, turbot and butter rich seafood dishes. While already compelling with air, it will cellar confidently for fifteen to twenty years, developing hazelnut and honeyed complexity.
