Beauroy lies on the left bank of the Serein in the Côte de Chablis, a Premier Cru known for combining generosity with chalky tension. Maison des Hâtes is the personal project of Pierrick Laroche, who left the larger Laroche family operation to focus on small scale, terroir driven Chablis. His approach is grounded in meticulous vineyard work, thoughtful farming practices and a belief that Premier Cru sites should speak clearly of their soils. Beauroy’s Kimmeridgian limestone and clay give both breadth and mineral precision.
Harvest is timed for freshness and phenolic ripeness. In the cellar, whole bunch pressing preserves delicacy, fermentation is slow and controlled, and élevage takes place in a mix of tank and carefully selected oak to build texture without overt flavour imprint. Lees ageing adds quiet depth while acidity remains the structural backbone.
Pale gold in colour, the aromas open with lemon zest, white peach and green apple layered with oyster shell, almond and flint. The palate is medium bodied and structured, with citrus and stone fruit wrapped in bright acidity and a creamy yet chalk edged texture. Flavours extend into a long, mineral finish that feels saline and persistent.
It pairs beautifully with oysters, scallops, roast chicken and buttery seafood dishes. Already compelling for its balance, it will cellar confidently for twelve to fifteen years, gaining nutty and honeyed complexity.
