Since taking over in 2023, Tim Perrin has been making changes here and there. For his first Salasso, low yields forced the decision to source pinot noir from vineyards across the peninsula and shiraz (50%) from Heathcote. It comes together well. An attractive coppery/pink pastel hue; a neat combo of watermelon, pomegranate and barely ripe raspberries with a flutter of spice. It has texture, tang and the acidity leaves the palate fresh and ready for another sip.

An attractive salmon-pink colour. The nose offers notes of alpine strawberry and orange peel together with a peppery spiciness. Long and linear with a subtle creaminess, the palate delivers flavours of cranberry and just-ripe brambleberry. The citrusy acidity ensures a dry and fresh finish.
