Blackcurrant, mint and chocolate
Opens with lifted aromas of blackcurrant and fresh green bell pepper against a backdrop of chocolate, cherries, spicy cedar and mint notes. The firm palate if medium to full-bodied, with a core of sweet fruit framed by fine tannins and spicy oak notes.
For a dinner party, the night air filled with the aromatic smoke of charcoal-grilled lamb cutlets crusted in cumin, salt, and sumac. This Cabernet is an exercise in structural focus and crunch, delivering a cool-vintage precision that brings refreshing energy to the table. The wine’s classic, savory pulses of fresh green bell pepper, mint, and dark chocolate act as a perfect textural bridge to the charred, resinous herbs of the dish, while its fine, architectural tannins effortlessly slice through the rich lamb fat, leaving the palate entirely revitalized.
Keeping it casual? Pour a glass alongside a rich, comforting eggplant parmigiana straight out of the oven. The wine’s medium-to-full body and core of sweet cherry fruit beautifully absorb the savory, melting texture of the cheese and the smoky depth of the baked eggplant, making a simple night in feel incredibly sophisticated.
More about this wine
Taylors is a third-generation family-owned winery with substantial estate vineyards in South Australia’s Clare Valley. The Jaraman range of wine builds on the Australian tradition of regional blending, each part elevating the other.
This Cabernet Sauvignon blends roughly equal components of Clare Valley and Coonawarra fruit. Both regions experienced somewhat cooler conditions in 2023. The wine was matured for 14-18 months in seasoned French oak hogsheads, and drinks well on release.
