Apricus Hill Chardonnay is a beautifully poised and elegant cool-climate white from Denmark in Western Australia’s Great Southern region, capturing the freshness and finesse that define this high-altitude site. Apricus Hill is one of the region’s most elevated vineyards, perched 750 feet above sea level on ancient gravelly lateritic soils just a few kilometres from the Southern Ocean. The vineyard’s combination of altitude, proximity to the coast, and poor soils creates an ideal environment for Chardonnay, producing fruit with natural acidity, fine structure, and lifted aromatics.

The cool maritime climate of Denmark is one of the chilliest in Western Australia, with brisk sea breezes and long, gentle ripening periods that allow grapes to develop flavour slowly while retaining precise acidity. Chardonnay from Apricus Hill is hand harvested to ensure optimal fruit integrity. Fermentation is typically carried out in a mix of stainless steel and French oak barrels, with a portion undergoing wild fermentation to build texture and complexity. Some lees stirring is employed during maturation, enhancing creaminess while preserving the wine’s bright, mineral backbone.

In the glass, Apricus Hill Chardonnay shows a pale straw colour with green hues. The nose offers delicate aromas of white peach, citrus blossom, grapefruit zest, and struck flint, with subtle notes of cashew and brioche from the judicious oak handling. The palate is medium bodied and finely structured, with stone fruit and citrus flavours layered over a taut, mineral spine. Bright acidity gives the wine drive and length, while the oak sits in perfect balance, adding subtle texture without dominating.

This Chardonnay pairs beautifully with freshly shucked oysters, grilled marron, seared scallops, roast chicken with lemon and herbs, or creamy risotto with asparagus. It’s also excellent with soft cheeses like brie or chèvre. Best enjoyed over the next 5 to 8 years, it will develop further nutty and toasty complexity with bottle age while retaining its cool-climate precision.
