Beechworth’s granite hills have long produced Chardonnay of intensity and structure, and Adam’s Rib from Castagna offers a distinctive interpretation of the region. The wine was created by Julian Castagna, who established the estate in 1997 with a strong focus on biodynamic farming and minimal intervention winemaking. His philosophy is deeply influenced by both Rhône and Burgundian traditions, and Adam’s Rib reflects that approach by blending Chardonnay with a small portion of Viognier. The vineyards sit on ancient decomposed granite soils in the foothills of the Victorian Alps, where warm days and cool nights help preserve acidity while building aromatic complexity.
Pale straw with bright golden reflections, the aromatics are expressive and layered. White peach, nectarine and lemon zest emerge first, followed by hints of apricot blossom, ginger and subtle spice contributed by the touch of Viognier. A delicate flinty mineral character reflects the Beechworth terroir.
The wine carries impressive texture and depth, with stone fruit and citrus flavours supported by lively natural acidity. The small addition of Viognier adds a gentle aromatic lift and a silky, rounded mouthfeel that complements the Chardonnay’s structure. Notes of almond, lemon curd and subtle oak build through the wine before a long, savoury finish with mineral freshness.
It pairs beautifully with grilled scallops, roast chicken with herbs, lobster with butter or creamy mushroom dishes. With its balance of texture and acidity, Adam’s Rib Chardonnay will continue to develop additional complexity in the cellar for eight to twelve years.
