A wine that lives up to its name, L’Improbable takes Cahors somewhere altogether more refined than its brooding reputation might suggest. Château du Cèdre, run by brothers Pascal and Jean Marc Verhaeghe, has been at the forefront of redefining Malbec in this historic region, farming organically and pushing toward a purer, more site driven expression. Their vineyards sit on the limestone plateaux and slopes above the Lot River, where poor soils and elevation bring freshness and tension to a grape often known for power.
Here, Malbec shows a different face. There is depth, certainly, with black plum, dark cherry and cassis, but it is carried by lift rather than weight. Floral notes drift through, violet and a touch of wild herbs, alongside a fine mineral line that feels almost chalky. Oak is present but quietly integrated, adding subtle spice and a hint of cocoa without masking the fruit.
The palate is finely tuned, tannins are firm but polished, giving structure without heaviness. There is a clarity to the fruit that keeps things energetic, finishing long with a savoury edge that hints at graphite and earth. It feels composed, modern, yet still deeply connected to Cahors’ roots.
This is a natural partner for slow braised beef cheeks, duck confit with lentils, or a rich cassoulet where the wine’s structure can cut through the dish. It also shines with grilled lamb cutlets, especially with rosemary and garlic bringing out the herbal notes in the wine.
With time in the cellar, expect more complexity to emerge, truffle, leather and deeper savoury tones, while the fruit softens into something more seamless. Eight to twelve years will reward patience, though it is already showing impressive poise.
