This is made by the team using the saignèe method, with grapes biodynamically grown. All red varieties grown by Cullen are included, from the Cullen and Mangan vineyards. Harvesting is on fruit and flower days with fermentation – wild yeast – in a mix of stainless steel, barrels and ceramic eggs. A deep neon pink. The nose gives us spices, strawberries, dry herbs, a hint of orange rind, cherries and florals. Full of flavour and yet elegant, this is a superb example of Rosé. Balanced and clean, with bright yet gentle acidity and very good length. A complete style. Enjoy over the next two to four years.

Cullen’s Dancing in the Moonlight Rosé is not your average pink drink. Made under the guiding hand of Vanya Cullen, one of Australia’s most respected biodynamic pioneers, this Margaret River rosé is a vibrant expression of site, soil and celestial timing. The wine’s whimsical name might suggest something carefree, but behind it is a serious commitment to sustainable viticulture, lunar cycles, and gentle winemaking.
Crafted from biodynamically grown Malbec and Petit Verdot (with the blend sometimes varying slightly vintage to vintage), the fruit is handpicked, sorted and gently whole-bunch pressed. Fermentation is spontaneous with wild yeasts and the wine sees minimal intervention, often spending time in older oak barrels to add layers of texture and a hint of spice.
In the glass, it’s a delicate pale pink with aromas of wild strawberries, blood orange, rose petals and pink peppercorn. The palate is dry and energetic, with bright acidity, subtle phenolic grip and a whisper of savoury earthiness that nods to its biodynamic origins. It finishes clean, saline and lifted — the kind of rosé that can dance all year round.
Perfect with dishes like roast beetroot salad with goat’s cheese, crispy-skinned salmon, or even a summery watermelon and mint tabbouleh. Drink now or within the next 2 to 3 years while it sings with freshness.
