Corcelette is often the most perfumed corner of Morgon, and when you add old vines rooted in deep sandy soils, you get a style that leans toward finesse rather than power. Daniel Bouland has built his reputation on exactly this kind of site expression, farming organically, keeping yields low and letting the vineyard do the talking. The Sable bottling comes from parcels where the sand runs deeper, giving a more lifted, almost weightless feel to the fruit while still carrying the quiet intensity that his old vines naturally provide.
The 2024 vintage brings plenty of energy, and here it shows as purity and detail. Aromatics are immediately captivating, wild strawberry, red cherry and raspberry layered with rose petal and violet. There is a delicate spice note, a touch of white pepper, along with a faintly earthy, dusty character that speaks to those sandy soils. It feels open and fragrant rather than dense, with layers revealing themselves as it sits in the glass.
On the palate it is all about line and texture. Medium bodied but feather light in feel, with very fine tannins that almost melt into the fruit. Acidity is bright and precise, carrying flavours of red berries and a hint of pomegranate through to a long, gently savoury finish. The mineral imprint is subtle here, more about a soft, sandy grip than overt stone, giving the wine a silky, flowing character that is incredibly moreish.
Winemaking remains true to Bouland’s style, partial whole bunch, native ferments and minimal intervention, with élevage designed to preserve freshness and build quiet complexity rather than overt oak influence. The result is a wine that feels transparent, a clear window into Corcelette’s lighter, more aromatic side.
This suits dishes that echo its elegance. Roast chicken with thyme, duck breast with a cherry glaze, or a simple charcuterie spread all work beautifully. It is also excellent with grilled vegetables or lighter, herb driven dishes where the wine’s perfume can really shine.
Enjoy it slightly chilled while young to highlight that vibrancy and lift, or cellar for six to ten years as it gains more depth, moving toward notes of dried flowers, forest floor and spice while retaining its silky structure.
