Freycinet Chardonnay from Bicheno, on Tasmania’s east coast, is a quietly confident white that shows the region’s potential for crafting complex, age-worthy cool-climate Chardonnay. Grown just a few kilometres from the sea, the vines enjoy long sunlight hours, cooling coastal breezes and ancient, well-draining soils — a combination that delivers fruit with precision, natural acidity and a fine mineral edge.
This is a traditionally made Chardonnay with a focus on structure and texture rather than overt fruit. Hand-picked grapes are whole bunch pressed and wild fermented in French oak barriques, with partial malolactic fermentation and regular bâtonnage. The oak is carefully judged — enough to add creaminess and spice, but never at the expense of the wine’s freshness or line.
In the glass, it opens with aromas of white peach, lemon curd, toasted almond, flint and a subtle hint of struck match. The palate is medium bodied and textural, showing layers of nectarine, cashew, citrus peel and fine oak spice. There’s a saline lift and a beautifully taut finish that keeps the wine energetic and focused.
Food pairing: ideal with grilled scallops, chicken in tarragon cream, crab and lemon risotto, or roast cauliflower with almond sauce. Also excellent with hard cheeses or a herbed goat cheese tart.
Cellar potential: drinking well now but will evolve beautifully over 6 to 10 years, gaining savoury depth, hazelnut complexity and a softer, more integrated mouthfeel.
