The name Fumé Blanc signals the style: Sauvignon Blanc fermented and aged in oak rather than tank. The fruit comes from the Lockett vineyard in Kuitpo, one of the highest and coolest sub-regions of the southern Adelaide Hills at 320 to 340 metres. Slow ripening at altitude gives the grapes complexity and natural acidity that suits the oak treatment well.
Wild fermented in seasoned French oak and held on lees for ten months with regular stirring. The lees contact builds texture and a creamy complexity — brioche, cashew and a touch of baking spice — while the seasoned rather than new oak keeps the fruit in front.
Pale gold, the nose is lifted and tropical, with notes of pineapple, peach and citrus with brioche and cashew from the lees. The palate is textural and generous with vivid fruit, lemon-lime acidity and a long, harmonious finish. A different kind of Sauvignon Blanc, and a better one for it. Good value for a wine of this texture and complexity.
Try it with grilled prawns, a salad with smoked salmon, or a soft brie.
