Aromatically it opens with citrus, lemon and lime zest, alongside white peach and a hint of green apple. There is a gentle floral lift, with a touch of jasmine, and that unmistakable ocean influence, a faint saline note that gives it a real sense of place.
The palate is crisp and lively, driven by bright acidity that keeps everything tight and refreshing. Flavours move through citrus and stone fruit before finishing dry with a clean, mineral edge and a lingering salty flick that makes it incredibly moreish.
Winemaking is typically focused on preserving freshness, stainless steel fermentation and time on fine lees helping to build a little texture while keeping the fruit front and centre.
This is made for seafood. Fresh oysters, grilled prawns, calamari or a classic seafood paella all work beautifully. It also pairs well with lighter tapas, anchovies, olives and simple dishes where the wine’s freshness can shine.
