Paringa Estate Pinot Noir from the Mornington Peninsula is one of Australia’s most acclaimed cool-climate reds, combining richness and perfume with the elegance and structure that define the region’s best wines. Crafted by Lindsay McCall at his celebrated Red Hill South estate, it’s a benchmark example of how Pinot Noir can achieve both depth and restraint when grown on the Peninsula’s volcanic soils and cooled by ocean breezes.
The vines are planted on north-facing slopes of red basalt, where warmth and excellent drainage help the grapes ripen slowly and evenly. Each parcel is hand picked, sorted, and fermented separately in small open-top vats with gentle plunging to preserve delicacy and aromatics. After pressing, the wine matures for around 12 months in French oak barriques, about one-third new, before blending and bottling. McCall’s minimal intervention approach allows the vineyard to express its natural balance and complexity.
In the glass it glows deep garnet with crimson edges. The aroma is beautifully perfumed, offering dark cherry, raspberry, and plum layered with notes of rose petal, spice, forest floor, and fine French oak. The palate is silky and precise, showing layers of red fruit framed by supple tannins and bright acidity. Hints of truffle, earth, and savoury spice emerge as it opens, leading to a long, graceful finish.
It pairs superbly with duck, lamb, mushroom risotto, or roasted root vegetables, and also shines alongside game birds or soft cheeses. While delicious on release for its vibrancy and fragrance, it will develop greater depth and complexity over the next 10 to 15 years.
