Pascal Jolivet Sancerre Blanc is a benchmark expression of Loire Valley Sauvignon Blanc, crafted with precision and flair in the heart of Sancerre. Pascal Jolivet is one of the region’s most influential modern producers, known for his commitment to natural winemaking and a style that highlights purity, minerality and freshness. His wines are sourced from limestone, chalk and flint soils around the village of Sancerre, offering a vivid snapshot of the region’s diverse terroir.
Fermentation is spontaneous using native yeasts, and everything is vinified in temperature-controlled stainless steel to preserve freshness. No oak is used, allowing the variety and vineyard character to shine through.
This Sancerre Blanc opens with bright aromas of lime zest, green apple, grapefruit and crushed herbs, underpinned by a stony, smoky edge that speaks of its flinty soils. The palate is crisp, lean and energetic, with a mouthwatering line of acidity and a fine, chalky finish.
It’s a natural pairing for shellfish, chèvre, asparagus or Vietnamese-style salads. Delicious now but also capable of developing more texture and savoury complexity over the next 3 to 5 years.
