Half Bottle 375ml
Shaw + Smith Pinot Noir from the Adelaide Hills is a refined, cool-climate red that reflects the precision and intent of one of Australia’s most respected modern wineries. Founded in 1989 by cousins Martin Shaw and Michael Hill Smith MW, Shaw + Smith has become a benchmark producer in the Adelaide Hills, known for elegant, site-driven wines crafted with restraint and finesse. From the beginning, the pair’s focus has been on varietals best suited to the region’s altitude, cool nights, and long growing seasons, Sauvignon Blanc, Chardonnay, Shiraz, and increasingly, Pinot Noir.
The fruit for this wine is sourced from high-altitude vineyards including the estate’s own Lenswood and Balhannah sites. These vineyards sit on well-drained, quartz-rich soils, where the climate allows for gradual ripening and retention of vibrant acidity. Yields are kept low to ensure flavour concentration. Fermentation takes place with a mix of whole berries and whole bunches, followed by maturation in French oak, mostly used barrels, to preserve the delicacy of the fruit.
The nose is lifted and fragrant, with aromas of cherry, raspberry, rose petal, baking spice and subtle forest floor. On the palate, it’s medium bodied and finely textured, with layers of red fruits, soft tannins and a streak of cool-climate acidity. The finish is long and savoury, showing finesse rather than force.
Food pairing: ideal with duck breast, mushroom risotto, grilled salmon, roast beetroot salad or mild soft cheeses. Its bright acidity and supple tannins make it versatile at the table.
Cellar potential: while it drinks beautifully in its youth, it will reward careful cellaring over 5 to 8 years, gaining earthy, savoury complexity with time.
