The fruit is estate-grown from organically farmed, high-density Pinot Noir vines planted on volcanic soils, just a few kilometres from the Bass Strait. The site’s elevation, coastal breezes, and long growing season allow for slow ripening, resulting in grapes with vibrant acidity, bright aromatics, and fine structure.
Sinapius is known for its meticulous attention to detail in both vineyard and winery. Winemakers Vaughn Dell and Linda Morice craft the rosé using direct pressing and whole bunches, followed by wild fermentation in old French oak. The wine is left on lees for several months to build texture, and there’s no fining or filtering—what ends up in the bottle is raw, honest, and quietly complex.
In the glass, Jean Morice Rosé is pale, salmon-hued and intensely perfumed.
