Calderara Sottana is one of Mount Etna’s most revered contrade, a north facing amphitheatre of ancient lava flows and black volcanic sands that give extraordinary tension and mineral clarity. Tenuta delle Terre Nere was founded by Marco de Grazia, a pioneer who recognised Etna’s fragmented old vine vineyards as the equivalent of Burgundy’s crus. Farming is meticulous and largely organic in approach, with low yields and deep respect for the individuality of each lava flow. The Vigne Niche selection focuses on tiny, carefully chosen parcels within the contrada, highlighting the most expressive old vine Carricante.
The philosophy in the cellar is restraint and transparency. Fermentation is precise and controlled, often with a mix of stainless steel and neutral oak to build texture without muting the volcanic edge. Lees ageing adds depth and a fine creamy undertone, yet the wine remains tightly structured and mineral driven. The aim is to capture altitude, lava soil and northern exposure in pure form.
Pale gold in colour, the aromas open with lemon zest, green apple and white peach layered with jasmine, fennel and smoky crushed stone. The palate is medium bodied and finely etched, with citrus and orchard fruit wrapped in vibrant acidity and a saline, mineral core. Flavours stretch into a long, persistent finish that feels cool and shaped by volcanic ash.
It pairs beautifully with grilled fish, shellfish, Sicilian seafood stews and fresh cheeses. Already impressive for its precision and lift, it will cellar confidently for ten to fifteen years, gaining honeyed and nutty nuance while retaining freshness.
