Pale in the glass with a tinge of green and aromas of Bickford's lime cordial, grapefruit, green apple and freshly squeezed lime. Hints of citrus blossom, pressed wildflowers, crushed quartz, lemongrass, distant fennel tops, apple sorbet and stone. Tight with a super snappy acid line that gets the salvia going, plenty of focus and some nice concentration of flavour. Finishes dry and moreish.

Tin Shed Wines Wild Bunch Riesling from Eden Valley is a crisp, aromatic and finely structured white that captures the purity and tension of one of Australia's premier cool-climate Riesling regions. Made with minimal intervention, this wine reflects both the personality of the vineyard and the hands-off approach of winemaker Andrew Wardlaw. The result is a wine that’s precise, zesty and refreshingly dry — a benchmark Eden Valley style with a bit of swagger.

The fruit is sourced from high-altitude vineyards in Eden Valley, where cool nights and rocky soils preserve acidity and build complexity. The grapes are hand picked and gently pressed, with fermentation in stainless steel at low temperatures to retain freshness and expressive aromatics. There’s no oak, no fluff — just clarity and vibrancy.

The nose opens with classic notes of lime zest, lemon blossom, green apple and crushed quartz. The palate is racy and dry, with intense citrus flavours, Granny Smith apple, hints of grapefruit and a talc-like minerality. There's great drive and length, with a bright acid spine that carries the wine through a crisp, mouthwatering finish.

Food pairing: ideal with oysters, Thai green curry, sashimi, salt and pepper squid, or a crunchy summer salad with herbs and citrus dressing. Also excellent with goat cheese or Vietnamese-style spring rolls.

Cellar potential: drinking beautifully now for its tension and fruit purity, but will reward 8 to 12 years of cellaring, developing complex notes of toast, honey and lanolin.
