Light bright yellow; spicy and citrusy aromas suggesting some barrel work involved here, with a faint waft of reduction; the palate is refined and reserved yet has an underlying richness that combines with a savoury suite of flavours to give an appetising wine with richness and depth of flavour that persists long on the aftertaste. There's an exotic chalky, honeyed twist that excites. Good fruit concentration and clever winemaking. Delicious wine. Drink 2025 to 2031.

Ashbrook Estate has been quietly making some of Margaret River's most consistent wines since the Devitt family planted their first vines in Wilyabrup in 1975. The third generation continues to produce wines from estate vineyards that are managed with a long-term view of soil health rather than short-term yield.
Ashbrook's oldest Sauvignon Blanc vines date to 1976 and are among the earliest plantings of the variety in Margaret River. A second block was added in 1990, with both blocks trained on a lyre trellis. This open system promotes health and even ripening through good airflow and even sunlight exposure across the vine canopy. Hand-picked over two days in the cool of the morning, pressed immediately and fermented in stainless steel with minimal intervention before bottling in June 2025.
The 2025 is refined and expressive. Passionfruit, gooseberry and fresh citrus on the nose with a chalky, honeyed depth and a subtle savoury thread that adds real interest. The palate is generous and well-structured, combining fruit purity with underlying richness and a long, appetising finish.
The wine's full-spectrum fruit and clean acidity suit anything fresh and flavoursome: a Thai green prawn curry with jasmine rice, or grilled John Dory with lemon butter and capers.
