This Sauvignon Blanc exemplifies that philosophy, showing purity, balance and subtle savoury nuance that reflect both the cool Geelong climate and the estate’s limestone-rich soils.
The fruit comes from mature vines surrounding the Bannockburn winery, where the region’s cool maritime influence ensures slow, even ripening and exceptional flavour development. The grapes are hand picked and whole bunch pressed, with fermentation carried out using wild yeasts in a mix of stainless steel and older French oak barrels. The wine then rests on its lees for several months, building mouthfeel, softness and gentle complexity while preserving freshness and minerality.
In the glass it shows pale straw with green reflections. The aroma is layered and refined, revealing white peach, lemon zest and passionfruit alongside delicate herbal notes, wet stone and a touch of flint. On the palate it is textured and lively, with bright citrus and tropical fruit flavours balanced by crisp acidity and subtle savoury undertones. The lees ageing lends a creamy mid-palate and a long, chalky finish that feels both elegant and grounded.
Bannockburn Sauvignon Blanc pairs beautifully with oysters, scallops, grilled asparagus, or goat cheese salad. It also complements Asian dishes with lemongrass, chilli or ginger.
