Perfumed and lively Shiraz with expansive dense layers of fruit
This is an absolutely beautiful medium- to full-bodied wine with a deep core of fruit and ripe, structured tannins. Perfumed and attractive, the flavoursome palate expands in a Pinot like fashion, building one fine layer of the dense and lively fruit on top of the other.
Defined by its shape and feel rather than mere weight, this Shiraz is approachable now but promises to evolve and gain complexity over years to come. Try with twice-cooked pork belly, served simply with jasmine rice and a mature black vinegar, or grill duck breasts over charcoal and serve with a plum sauce easy on sweetness.
About this wine
Domenica Estate Shiraz comes from 30-year-old cane pruned vines, growing on steep decomposed granite soils at 450m elevation with a south facing aspect.
Winemaking is focused on traditional techniques to highlight the purity and character of the fruit. Grapes are hand-harvested and undergo whole-bunch fermentation to enhance aromatics and tannin structure. The wine is aged in large-format French oak barrels, allowing for a gentle integration of oak influence while preserving the bright fruit and spice of the Shiraz. Minimal intervention in the cellar ensures that the wine retains its authentic expression of terroir.
The 2025 Shiraz is sealed under Diam with wax.
About this producer
Domenica sits 460m atop the granite ridge southwest of Beechworth. The four-hectare vineyard is planted to Chardonnay, Nebbiolo, Shiraz and Gamay. The vineyard was first planted in 1996, with the first wines under the label appearing in 2012.
Owner Peter Graham lives and breathes the site, and his wines aiming to simply be a reflection of the excellent vineyard.
