Keep your food option clean and unfussy for this wine, letting high-quality ingredients, fresh herbs and light sea salt do the work. Try with chilled fresh prawns with a squeeze of lime, or Vietnamese rice paper rolls filled with chicken/tofu, mint and cucumber.
More about this wine
From the warm and dry 2025 season, this wine is a blend of Coal River fruit that was de-stemmed and crushed for a gentle pressing prior to cold settling overnight. The must was racked into stainless steel for inoculated ferment at controlled 18 to 20 degree temperatures. The wine was kept on lees for eight weeks and cold stabilised before filtration ahead of bottling.
