Jasper Hill is one of the true pioneers of Heathcote, established by Ron and Elva Laughton in 1975 and still very much a family affair today. Georgia’s Paddock, named after their daughter Georgia, is best known for its magnificent Shiraz, but the Riesling has long been one of the estate’s quieter treasures. Farming is organic and the philosophy remains deliberately hands off, allowing the vineyard rather than winemaking fashion to set the agenda.

Heathcote may be famous for powerful reds, but Riesling finds an intriguing home here. The ancient Cambrian soils and dry climate produce a distinctly different expression from Clare or Eden Valley, with citrus intensity, texture and a savoury mineral edge. The 2025 has lovely youthful drive, balancing ripe fruit with the variety’s naturally brisk acidity.

Very pale straw with green flashes, the bouquet runs through lime zest, green apple and grapefruit before opening into white peach and lemon blossom. There are hints of lemongrass, fennel and crushed stone underneath. The palate is dry and tightly drawn, with lime and grapefruit giving plenty of bite, while a little pear and white peach soften the centre. Stony, almost chalky texture carries through to a long finish of citrus peel and fresh herbs.

Vietnamese turmeric fish with dill would be terrific, alongside oysters with finger lime, prawn and chive dumplings, salt and pepper squid or grilled whiting with lemon and capers. Our pick is the turmeric fish. The combination of citrus, herbs and gentle spice is spot on with young dry Riesling.
