Grown at high elevation on the Mountadam Estate — one of the highest vineyards in South Australia — this Pinot Gris benefits from long ripening under cool conditions, which enhances flavour development while preserving crisp acidity and natural freshness.
Fruit is harvested in the early morning to retain brightness, then fermented in stainless steel with a portion left on lees for a few months to build mouthfeel and complexity. The result is a wine that balances freshness with gentle weight and softness, offering a style that sits between the racy Italian Pinot Grigio and the richer Alsatian approach.
The nose shows white pear, lemon blossom, green apple and a hint of almond meal. The palate is dry and textural, with flavours of Nashi pear, citrus peel, honeysuckle and a subtle stony edge. There’s a fine acid line and a clean, slightly savoury finish that gives the wine its versatility and drinkability.
Food pairing: great with grilled chicken, Thai fish cakes, baked salmon with fennel, or soft cheeses like burrata. Also excellent with vegetable risotto, pork dumplings or fresh seafood.
