From organically farmed vineyards in Central Otago, this Sauvignon Blanc shows a cooler, more mineral expression of the variety compared to coastal New Zealand styles. Peregrine’s sites sit at elevation on free draining soils, where intense sunlight is balanced by cold alpine nights that preserve acidity and aromatic precision. Organic farming is central to the estate’s philosophy, encouraging vine health and purity of flavour, and the result is a wine that feels clean, focused and distinctly regional.

Winemaking is geared toward freshness and clarity. Fruit is handled gently to protect aromatics and natural crunch, with minimal intervention allowing the vineyard voice to stay front and centre. The style is bright and textural rather than aggressively pungent, leaning toward citrus, herbs and mineral lift.

In the glass it shows pale straw with green flashes. Aromas open with lime zest, grapefruit and green apple, followed by fresh herbs, white flowers and a subtle stony note. There is a crisp alpine freshness running through the bouquet.

The palate is light to medium bodied and energetic, with citrus and orchard fruit carried by zippy acidity. A gentle textural grip adds shape through the mid palate, finishing dry, crunchy and refreshing. The wine feels precise and vibrant, designed for immediacy and drinkability.

It pairs effortlessly with seafood, salads, goat’s cheese, Asian dishes and anything bright with herbs and citrus. Best enjoyed young for maximum freshness and snap, though it will hold comfortably for two to four years.
