The fruit is sourced from carefully selected vineyards in the Watervale subregion, known for its elevated sites, cool nights and classic terra rossa soils over limestone. These conditions allow for a slower ripening period, preserving natural acidity while building intense citrus and floral aromatics.
Fermentation is stopped before dryness to retain a delicate level of residual sugar. The result is a wine that opens with aromas of lime blossom, green apple, mandarin peel and honeysuckle. On the palate, there’s a juicy core of citrus, white peach and lemon sherbet with a gentle sweetness that’s more textural than sugary. A chalky mineral line and zesty acidity bring energy and freshness to the finish.
