Pale and dry Gamay rosé with savoury and saline red fruit and herbs
Sinapius has become one of Tasmania's most intriguing small producers, known for beautifully individual wines from its vineyards at Pipers Brook in the island's north. Founded by Vaughn and Linda Dell, the estate has earned a devoted following for its thoughtful vineyard work and elegant, site driven wines. Jean Morice Rosé is a particularly charming expression of the Sinapius philosophy, combining delicate fruit with the freshness and savoury character of Tasmania's cool climate.
The 2025 vintage reflects the long, gentle ripening conditions of northern Tasmania, producing a dry rosé with lovely aromatic definition and natural acidity. Rather than chasing sweetness or exuberant fruit, the emphasis is on texture, balance and a subtle savoury quality that makes it especially appealing with food.
A delicate salmon pink with a faint copper hue. Wild strawberry, redcurrant and white nectarine mingle with rose petals, pink grapefruit and a little dried herb. The palate is silky and refreshing, with bright red berries, citrus zest and a gentle savoury edge. A fine mineral note carries through the crisp, dry finish.
Try it with chargrilled octopus and smoked paprika, watermelon salad with whipped feta and mint, or Japanese salmon tataki with sesame and ginger. Equally delicious with roasted tomato and ricotta tartlets.
Cellaring: Drink now to 2028. Best enjoyed for its youthful fragrance and lively freshness.
