The modern wine story began when the Swinney family shifted from livestock to viticulture, planting on ancient gravelly ironstone soils that produce fruit of remarkable structure and perfume. Today the wines are crafted by winemaker Rob Mann, whose philosophy centres on precision, texture and site expression. Mourvèdre thrives in this cool, windswept corner, retaining brightness while developing savoury depth.
The rosé is made with intent rather than as a by product, with fruit picked specifically to preserve freshness and fine phenolics. Gentle pressing limits colour extraction, and fermentation is handled carefully to protect aromatics and tension. The result is a rosé built on savoury structure and mineral length rather than overt sweetness.
Pale salmon in colour, the aromas open with wild strawberry, pink grapefruit and cranberry layered with dried herbs and subtle spice. The palate is dry and finely structured, with red berry fruit wrapped in crisp acidity and a faint saline thread. Flavours glide into a long, savoury finish that feels refreshing yet serious.
