Tim Adams established his Clare Valley winery with his wife Pam in 1987 and has been making consistent estate grown wines ever since.
Tim’s approach to Riesling hasn’t changed over the decades: the intention is pure varietal expression. Only free run, fermented slowly in stainless steel at cool temperatures for two weeks to preserve the delicate aromatics. Protein and cold stabilised, with minimal sulphur dioxide was used at bottling. The 2025 was a warmer and drier growing season than recent vintages, which has given the wine a slightly more restrained character compared to for example the 2024.
Pale straw, the nose is lifted and pristine — lime, green apple and lemon blossom with grapefruit and white peach underneath. The palate is dry, focused and energetic with bright citrus, fine mineral grip and a long, clean finish.
Dry Clare Riesling is a classic style recognised around the globe. Zesty and spirited now and will develop slowly and gracefully with time in the cellar. Fresh oysters are a natural side for young wines, while aged toastier wines would look nice with steamed chicken or grilled prawns. Equally good on its own. Serve chilled, not ice cold.
