Timo Mayer, the German born, minimal intervention vigneron behind Bloody Hill, has built a fiercely loyal following since establishing his vineyard in the early 2000s. Known for whole bunch fermentation, wild energy and an uncompromising hands on approach, Mayer crafts wines that are vibrant, textural and unmistakably individual. His releases are tightly allocated and often sell out quickly on release, reinforcing their cult appeal. In a region celebrated for Pinot Noir and Chardonnay, Yarra Valley Cabernet Sauvignon can be beautifully perfumed and finely structured, and Mayer embraces that cool climate identity with confidence.
The colour is vibrant ruby to deep crimson, hinting at both intensity and lift. Aromas leap from the glass with redcurrant, sour cherry and black plum intertwined with bay leaf, crushed violets and dried herbs. The whole bunch influence brings a savoury spice and subtle stem complexity that adds aromatic brightness and tension.
On the palate it is medium bodied, energetic and finely structured. Crunchy red and black fruits glide across chalky tannins and bright natural acidity, delivering precision rather than weight. Notes of graphite, tobacco leaf and gentle oak add depth through the mid palate, while the finish is long, savoury and distinctly cool climate in character. It is Cabernet with edge, detail and personality.
