From the steep Bloody Hill vineyard in the Yarra Valley comes one of Australia’s true cult Pinot Noirs. The Doktor is a flagship release from Timo Mayer, the German born, whole bunch loving vigneron whose wines have built a fiercely loyal following. Produced in very small quantities, it is tightly allocated and consistently sells out quickly on release. Mayer’s philosophy is hands on in the vineyard, minimal intervention in the cellar and maximum energy in the glass. In a region already renowned for cool climate Pinot Noir, The Doktor stands apart for its structure, aromatic intensity and unmistakable personality.
The colour is vivid ruby with brilliant crimson flashes, translucent yet concentrated. Aromas are lifted and complex, revealing wild strawberry, red cherry and cranberry layered with rose petal, five spice and a distinct herbal lift from generous whole bunch fermentation. There is a savoury undertone of forest floor and crushed stone that grounds the vibrant fruit.
On the palate it is medium bodied yet tightly coiled, driven by bright natural acidity and finely structured tannins. Red berry fruit pulses at the core, framed by spice, subtle stem complexity and a mineral backbone that carries through the wine. The whole bunch influence brings perfume and tension rather than heaviness, leading to a long, savoury finish with lingering cherry skin and earthy nuance. It is energetic, detailed and unmistakably Yarra Valley.
Serve with roast duck, quail with thyme, pork belly with cherry glaze or mushroom and truffle dishes. While captivating in its youth for perfume and vitality, this wine will cellar confidently for fifteen years or more, developing layers of dried rose, undergrowth and savoury complexity.
