From the Montagne de Reims village of Villers Marmery, one of Champagne’s rare Chardonnay strongholds, this Demi Sec shows a softer, more generous side of A. Margaine’s precise house style. The estate is known for tension and mineral clarity, but here that backbone is wrapped in gentle sweetness, creating a Champagne that balances richness with freshness. Chalky soils and cool exposures preserve acidity, which is crucial in a Demi Sec, keeping the wine lifted rather than heavy.
The base wine is built with the same care as the Brut cuvées, fermented for structure and aged on lees to develop texture and complexity. The higher dosage is used not to mask flaws, but to frame the fruit and enhance roundness. The result is a Champagne that feels plush yet controlled, designed for both dessert and contemplative sipping.
In the glass it shows pale gold with a fine, persistent bead. Aromas open with baked apple, pear and candied citrus, followed by brioche, honey and almond. There is a chalky freshness beneath the sweetness that keeps the bouquet elegant.
The palate is medium bodied and creamy, with orchard fruit and citrus wrapped in soft mousse and bright acidity. Sweetness is present but beautifully integrated, balanced by mineral tension. Flavours move toward honeyed and nutty tones, finishing long and silky rather than cloying.
It pairs beautifully with fruit desserts, tarte tatin, blue cheese, foie gras or spicy cuisine. Served well chilled, it becomes a luxurious aperitif in its own right. While delicious now, it will evolve for five to eight years, developing deeper caramel and toasted complexity.
