The Bay of Fires wines were born of a desire to make cool climate wines of classical structure, combining fruit intensity with refinement, complexity and persistence of flavour. Made from small, high quality selections of fruit from across Tasmania’s viticultural regions, Bay of Fires Tasmanian Cuvees celebrate the unique cold climate and ancient soils of the Island.
Tasting Notes
Medium salmon pink in colour. This wine displays aromas of ripe strawberry fruits and musk complemented by the aged characters of lanolin, toast, sea brine and mushroom characters. On the palate, red berry fruits are combined with earthy truffle and sourdough yeast. Overall this elegant sparkling wine maintains a flavorsome palate with natural yoghurt texture, crisp natural acidity and a fine tannin grip.
Winemaker’s Notes
Hand picked fruit from renowned sites throughout the prestige sparkling wine regions of Tasmania. Richer and more overt Pinot Noir components are chosen for this blend to ensure a strongly red fruit dominant style.
