In a remarkable change of fortunes for this once overlooked grape, Aligoté is the buzzword in Burgundy right now. From either Estate-owned vines or rented parcels of old-vine Aligoté dotted around Burgundy, a number of top growers are crafting some astonishingly delicious whites. 
Pillot’s Aligoté is drawn from 1.5 hectares of Estate-owned vines in Chassagne and across several parcels in the Côte Chalonnaise. Like all the whites here, the grapes are whole-bunch pressed and naturally fermented. This cuvée spends time on its lees, yet with no stirring, in both stainless steel tanks and older oak barrels. The tanks preserve freshness, while the barrels give more mid-palate richness and texture. Burgundy’s top growers continue to show us what the Aligoté grape is capable of in the right hands. This crystalline, textured Pillot example will just add more grist to the mill. It's a delicious drink and a brilliant value. Expect vibrant lemon pith and almond oil fruit, zesty tang and just a lick of leesy creaminess.
