Les Pargues is a Chablis lieu-dit (place name/single vineyard) situated on a ridge between Montmains and Vosgros. It has the same exposure as the 1er Crus of Les Vaillons and Montmains, so it’s a very handy site. The story goes that this site was originally classified as a 1er Cru-level vineyard (pre-AOC), before being largely abandoned during the war (when there was a labour shortage). Regardless of this story, locals rightly speak very highly of this site. 
The vines in Moreau’s tiny parcel are 40-50 years old and generate even more perfume, flesh and intensity than the AC Chablis above. This cuvée is the first to see a measure of neutral wood and is bottled separately as a Vieilles Vignes. It’s brimming with racy, textured fruit braced by chalky texture and a piercing mineral core. The note below sums it up beautifully.

The 2017 Chablis Pargues Vieilles Vignes lives up to its strong showing last year, unfurling in the glass with aromas of green apple, pear, citrus oil, beeswax and oyster shell. On the palate, it's medium to full-bodied, fleshy and concentrated, with a deep and layered core that's underpinned by lively acids, concluding with a penetrating finish. It's mostly matured in tank but some 10% is raised in used barrels.
