I've always liked this wine. A gorgeous hue. Pallid coral. Glimpsing colour without quite touching it. The fruit, too, is a skittish beam of red fruits, just ripe enough, powdery and crunchy and effusive of energy. Long and pleasing and delicious. The skill on show is knowing when lees work (one year on this release) is sufficient to achieve the goal of nerve, flavour and etherealness.
100% Pinot Noir. Pinot Noir fruit for the Ashton Hills Vintage Rosé is sourced from a single vineyard lying in the Piccadilly Valley - a particularly cool, wet and humid part of the Adelaide Hills. An area well-suited to producing crisp, finely-flavoured sparkling wines.
Attractive salmon hue. Aromas of fresh strawberries and raspberry coulis, with slight brioche and biscuit notes. Crunchy and red fruited, the palate is fresh and vibrant with a lovely acid line. Bottle fermentation is evident in the complex, creamy finish, and the fine bead of bubbles. The low dosage keeps the wine dry and crisp.
