Deep colour with a mere trace of purple remaining; the bouquet shows polished leather and earthy/wood-panelling aromas, dried mushrooms, dried herbs and mint as well, very savoury and regional, with a peculiarly Hunter style of pepperiness. The shiraz was grown on the famous Tallawanta Vineyard planted 1920 with typical sandy loam. Deeply coloured; cold soaked for 5 days then warmed for inoculation with cultured yeast; matured for 18 months in French puncheons (40% new). Lovely shiraz, as befits this great vineyard. Gloriously complex and textured. Ripe tannins are at the core of the wine.
