Consistently my favourite wine from the Howard Park sparkling wine program. The latest NV release is based on the 2021 vintage and is drier, finer and more savoury than previous releases. With a minimum of 31 months ageing on lees and some oak barrel usage in base wines, this poised sparkling has subtle notes of dough, olive bread and toast, but the aromatics of cherry, wild strawberry and pomegranate sit forward. The mouthfeel is texturally fine and crisp with long, moreish flavours cleansing the palate.

It’s a coppery/pale-pink hue with plenty of fine bead then inflections of cherries and spice, red apple and a hint of woodsy spices. While it’s racy across the palate, partly due to perky acidity, it’s super dry and ultra-refreshing.

Fermentation takes place in stainless steel to preserve the purity of the fruit and ensure the wine retains its crisp, refreshing profile.
