Stephane Tissot makes a lot of fantastic wines, but right up there are his magnificent fizzy ones. This is pinot noir ala Jura cremant. Zero dosage and no sulphur added too. Of course, all the fruit is grown biodynamically (certified). Wicked drinking, complex and rich yet cut with that bustle of saline acidity that Jura wine seems to ubiquitously come with. Scents of white strawberry, ripe lemon, sea spray, salted nuts and sourdough. Richer kind of texture but not over the top and certainly its cut with crunch of acid and prickle of big bubble fizz. The wine finishes long, stains the palate gently, very satisfying, distinct style. So down with this.
