It is drawn directly from selected barrels, bottled en rama, meaning unfiltered and only lightly stabilised. This preserves texture, aroma and the vivid savoury character that flor ageing imparts, but also means the wine is deliberately untamed and expressive.
In the glass, Perdido Fino is pale and slightly hazy, immediately signalling its unpolished nature. Aromas are intense and captivating. Fresh bread dough, green almond, chamomile and sea spray leap from the glass, followed by notes of bruised apple, yeast and a salty, maritime edge that speaks clearly of coastal Andalucía.
